Control atmosphere storage is a new technique to enhance the storage life of fruits and vegetables. Depending on the preferred storage temperature of the fruit or vegetable, the temperature is set, The gas composition in terms of concentrations of oxygen and carbon di oxide is also set. The question comes, which should be set first? From the knowledge of temperature quotient, it is known that as the temperature is lowered inhibits the deterioration of the fruit or vegetable.
